I have made the Holy Grail of deceptively healthy and Jeff-approved desserts (a winning combo? I think so)
See below for a mouth that will say “Yey!”
High Protein Cookies
Ingredients
- 1.5 cups rinsed canned chickpeas
- 1/2 cup nut butter (I used 1/4 cup cashew and 1/4 cup coconut butter, but peanut butter would work)
- 1/4 cup almond milk (or cow’s milk, or water would probably work too…)
- 1 tsp vanilla extract
- 1 tbsp coconut flour (or white, or whole wheat)
- 1 tsp baking powder
- 1 tbsp coconut sugar (or honey*, or brown sugar or agave*)
- pinch of salt
- 3 tbsp add ins (I used 1 tbsp dark chocolate chips, 1 tbsp white chocolate chips, and 1 Tbsp carob nibs. You could use nuts, dried fruit, seeds, or whatever)
Directions
Preheat oven to 400 degrees F. Drain and rinse chickpeas really well to get the bean taste off. Add all the ingredients (except the add-ins) into a high powered blender or food processor and mix until smooth (may need to do in steps if lower watt mixer). place into a bowl and mix in your add-ins (choco chips, nuts, fruits etc.) Drop approx. 1 tbsp sized dough-lumps onto a greased cookie sheet and smush flat so that approx 2.5” across. Bake at 400* for 15min, or until the bottoms are golden brown.
*If using liquid sweetner, reduce the amount of other liquid added by same.
